Lebanese Tabouli

(2) Flat Leaf Parsley (Shredded)
(1) Bunch of fresh mint (Shredded)
(1) Bunch green onions (cut small)
(2) Medium tomatoes (diced small)
(½) Cup small crack wheat (do not soak)
(½) Cup lemon or lime juice
(1/3) Cup olive oil
Salt and pepper to taste. I find the lemon makes the salad salty so add salt last.

DIRECTIONS:

Mix all ingredients except for lemon, oil, salt and pepper in a bowl. When you are ready to serve add lemon and stir. Then add oil last and salt and pepper to taste.

Serve in romaine lettuce wrap.

I love this recipe because it serves 4, is low in calories, and great for your digestion.
